Our Process

Our wild catch fish are delivered, fresh to us daily from our suppliers from Malaysia & Indonesia (by sea), and Thailand & India (by air). To maintain the freshness of our fish, we have in place a stringent process to handle your orders - from sourcing the best quality fish from wholesale markets, to delivering the freshest products kept in styrofoam boxes to your doorstep.

Our wild catch fish are delivered, fresh to us daily from our suppliers from Malaysia & Indonesia (by sea), and Thailand & India (by air). To maintain the freshness of our fish, we have set up a system to handle your orders.

Step 1: SELECTION The fish are selected based on your order. We select only the freshest available from each shipment. If the fish that you ordered is not fresh enough, we will not select the fish for you. We will inform you that the delivery will have to be postponed to another day. Step 2: DE-GUTTING, DE-SCALING and GILL REMOVAL Your selected fish will then be degutted, gills removed and de-scaled. The fish will then be cut according to your preference, into fillets or steak-style (with bone in the middle). Each slice of fillet weighs about 200-300g. The fish head is usually cut into half, though we can pack the fish head whole, per your request. Step 3: CLEANING This is of great importance to ensure that the fish stays fresh during storage. We diligently remove all visible traces of blood from the fish and especially from the head. This is because blood contains bacteria and will cause the rest of the fish to deteriorate, during storage. This is one of the reasons why our fish can stay fresh even when kept for more than 3 weeks.

Step 4: PACKING

The fish head is usually cut into halves and packed individually. The fillets are packed individually (200-300g slice) so that you only have to take out what you need to eat for each serving whilst the other pieces of fillet can be kept in the freezer. For fillets, the bones of the fish are packed separately.

Step 5: STORAGE

Our fish are kept in ice once it has been selected. After cutting & cleaning, it is immediately kept in an ice box and in the freezer to ensure that exposure time to our humid and warm environment is kept to a minimum. This helps ensure the fish stays fresh before it is delivered to you.

Step 6: DELIVERY

The fish is delivered in styrofoam boxes to ensure it remains chilled, maintaining its freshness.

Suggestions to Prolong the Freshness of Seafood:

1) We recommend that you keep your wild catch, fresh seafood in the freezer.

2) Take out only the portion you wish to cook, to thaw.

3) Do not re-freeze any seafood that you have taken out to thaw. The re-frozen seafood will not be as fresh as before.

4) If for any reasons, you could not cook the seafood that you have thawed, our suggestion is to wrap it in shrink-wrap and keep it in the chiller (not the freezer).

5) Ideally, seafood, once thawed, should be cooked and consumed on the same day. CLICK here for cooking suggestions here.
